Any Flavour Couscous Cake
(depending on which Muller you use)
4oz Couscous
2 Eggs
1/2 tsp Baking Powder
Muller Lite (any flavour)
4 tbsp Granulated Sweetener
Mincemeat Couscous Cake
4oz Couscous
3 Eggs
3 tbsp Granulated Sweetener
2 tbsp Mincemeat
1 Lemon (juiced)
Lemon Couscous Cake
4oz Couscous
2 Eggs
2 Lemons (Juiced) Rind Optional
2 tsp Lemon Curd
5 tbsp Granulated Sweetener
1 Tub (250g) Quark
1 tsp Baking Powder

Cover the couscous in boiling water. Cover and leave to stand for 5 mins and fluff with a fork.
Whisk the eggs separately.
Mix all the ingredients together thoroughly.
Bake in a greased loaf tin at 180C for 40 - 45 mins.
Alternative baking method: Microwave between 8 - 10 minutes.
Once cooked stick a clean knife in and check the inside is cook. The knife should come out fairly clean - No gooey mixure stuck to it.
Leave to cool and enjoy
