Use a good skillet
- Fry 1 sliced onion in nut oil
- Add 2 large diced chicken breasts until sealed
- Add 60g chorizo (cut into small chunks) & 3 crushed garlic cloves for 2 minutes
- Add 1/2 a deseeded and sliced green, red and yellow for 2 minutes - Add 2 cups of chicken stock (made with 2 cubes/pots), 1 tin chopped tomatoes 🍅 and 2.5tbsp Cajun spice ... stir
- Stir in 200g uncooked wholewheat penne pasta
- Cover and simmer for 15 minutes checking during this time. If it gets too thick for pasta to finish add a little boiling water - Once pasta is cooked add in 4 tbsp of fresh heavy cream, stir.
- Take off heat and add 2 handfuls of spinach, stirring.
- Serve
- Top with halved baby tomatoes, parsley and cheese of choice if desired
TIPS
- Add mushrooms
- Equally as nice without the cream if you want to reduce the fat for macros and or calories or syns for slimming world friendly!
- Add whole cherry tomatoes with the pasta instead of at the end if you like them cooked and sweet
- Cooked without the chorizo to fit in with food plan
- Make the pasta without any chicken for a vegetarian dish
- Steam/grilled some spiced chicken separately and cooked the pasta alone (same values)
