This was soooo nice. I didn't get a great picture light wise my kitchen is terrible so I will update.
Ingredients
- 4 chicken breasts
- Nut oil - coconut oil does not work well with this recipe
- Juice of 2 lemons
- 4 crushed garlic cloves - 2 if desired
- 1tbsp ground cumin
- 1tbsp hot paprika (smoked if possible)
- 1tbsp ground coriander
- 1/2tbsp chilli flakes
- 1 red onion sliced
- 1 yellow pepper sliced
- 1 red pepper sliced
Tip -
If you don't like too spicy change 1tbsp to 1tsp and 1/2tbsp to 1tsp
- Prep Slice or dice the chicken as desired
- In a bowl mix the lemon juice, spices, garlic & 2tbsp nut oil together
- Add the chicken & mix
- Marinate for minimum of 3 hours
- Cook chicken in a good pan/griddle pan for roughly 3 minutes using 1tbsp of nut oil
- Add peppers and onion cooking for a further 5 minutes until chicken is cooked
