Ingredients:
X2 tin tomatoes
1 red pepper sliced
1 medium onion sliced
4 eggs
2-3 garlic cloves finely chopped
1/2 tsp cayenne pepper, ground cumin & paprika
1/4 tsp chilli flakes
- fry garlic, red pepper and onion in a little but oil
- add tin tomatoes
- add and stir in spices
- simmer for 5 minutes
- make wells in the floor and add the eggs
- turn up the heat a little
- cover with lid for 5-10 minutes depending how you like your eggs
- serve
I served on baby spinach with lean bacon (fat cut off)
