400g Frying steak cut into slices
3tbsp groundnut oil
2tbsp cornflour
1 red peppers de-seeded an cut into chunk
200g raw broccoli cut into pieces
Handful cashew nuts
5cm grated ginger (peeled first)
3 garlic cloves finely chopped
2 fair sized red chilli's sliced finely
2tbsp hot vegetable stock
1tbsp sesame oil
2 tsp dark soy sauce
2tbsp light soy sauce
Prepare all ingredients before starting to cook.
- Toss beef into a bowl with the cornflour, covering all the meat with the flour
- Heat 2tbsp groundnut oil in a frying pan
- Add red chilli, ginger & garlic stirring for 10 seconds
- Add beef & fry until brown
- Transfer to a plate
- Add 1tbsp groundnut oil to frying pan
- Add red pepper, broccoli and some pepper to taste and fry on a medium heat until veg slightly softens (4-5 minutes)
- Return beef and herbs to pan
- Add cashew nuts, soy sauces, sesame oil and veg stock
- Cook until bubbling hot and cooked through.
* You could add more pepper if you don't want to add broccoli
* Cashew nuts optional
* Use less coconut oil in replace of groundnut oil
